Sous Vide Corn for a Crowd

Sous vide corn is perfect summer-party food, and a gallon bag lets you cook up to a dozen ears at once instead of boiling pot after pot. The corn comes out sweet and tender with butter and salt cooked right in. What you need

  • Up to 12 ears of corn, husked and halved if long
  • 6 tablespoons butter, sliced
  • 2 teaspoons kosher salt
  • Optional: fresh thyme, a squeeze of lime, chili powder
  • 1 XXL Silicone Food Storage Bag (Clear)

Directions

  1. Heat the water bath to 183°F. Husk the corn and snap or cut the ears in half so they fit flat.
  2. Load the ears into the Clear bag with the butter slices and salt. Lay them so the bag can sit flat.
  3. Use the water-displacement method: seal the zipper most of the way, lower the bag in to push out air, then seal it fully.
  4. Clip the bag to the side of the pot so the corn stays under the water.
  5. Cook about 30 minutes. Through the Clear bag you can see the kernels brighten as they cook.
  6. Lift the corn out, season with anything extra you like, and serve hot with the buttery juices.

Tips and notes

  • 183°F gives tender corn that still has a little bite; go a few degrees lower for crisper kernels.
  • Halving the ears lets more fit flat and keeps the bag submerged.
  • Everything cooks in the bag, so the butter and salt flavor the corn directly.
  • Hold finished corn in the warm water bath for up to an hour if your guests are running late.
