Big-Batch Fajita Chicken

What you need

  • 3 to 4 pounds boneless skinless chicken thighs
  • 1/3 cup lime juice (about 4 limes)
  • 1/3 cup oil
  • 6 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 2 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon oregano
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • Sliced peppers and onions, to cook alongside

Directions

  1. Whisk the lime juice, oil, garlic, cumin, chili powder, paprika, oregano, salt, and pepper into a marinade.
  2. Add the chicken thighs to the Blue bag and pour the marinade over them.
  3. Press out the air and seal. Massage the bag so every piece is coated, then lay it flat so the chicken spreads in a single layer.
  4. Marinate in the fridge 2 to 8 hours, flipping the bag once.
  5. Cook hot and fast on a grill, cast-iron skillet, or sheet pan until the chicken reaches 165°F, then slice into strips.
  6. Char the peppers and onions in the same pan and pile everything into warm tortillas.

  • Thighs stay juicier than breasts for a crowd and forgive a few extra minutes on the heat.
  • Two hours gives good flavor; eight is the max before the lime starts to make the surface mealy.
