Overnight BBQ Ribs Marinade

A full rack of ribs is long, and that length is precisely why a standard bag never works for it. What you need

  • 1 full rack pork ribs (baby back or St. Louis)
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons kosher salt
  • 1 teaspoon each garlic powder, onion powder, black pepper
  • 1/2 teaspoon cayenne (optional)
  • 1/2 cup BBQ sauce, plus more for serving
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons oil
  • 1 XXL Silicone Food Storage Bag (Blue)

Directions

  1. Pat the rack dry and peel the thin membrane off the bone side so the rub can penetrate.
  2. Mix the brown sugar, paprika, salt, garlic powder, onion powder, pepper, and cayenne into a dry rub. Rub it over both sides of the rack.
  3. Whisk the BBQ sauce, vinegar, and oil into a marinade.
  4. Slide the whole rack flat into the Blue bag. Pour the marinade over it and work it along the rack through the bag.
  5. Press out the air, seal, and lay the bag flat in the fridge for 8 to 24 hours, flipping once.
  6. Remove the rack, let excess drip off, and cook low and slow (oven, grill, or smoker around 275°F) until tender. Glaze with more BBQ sauce in the last 20 minutes.

Tips and notes

  • Removing the membrane is the single biggest upgrade to rib texture; do not skip it.
  • Eight hours is plenty for flavor; the full day deepens it. Much past a day and the surface can get mushy from the vinegar.
  • Lay the bag flat so the rack sits in a thin pool of marinade and coats evenly.
  • The Blue tint hides paprika and tomato staining, so the bag stays looking clean.

How long should ribs marinate
Eight to twenty-four hours in the fridge. Overnight is the sweet spot; beyond a day the acid can soften the surface too much.
Do I need to remove the membrane
Yes. Peeling the silverskin off the bone side lets the rub and marinade reach the meat and keeps the rack from curling.
Can I fit a whole rack in the bag
That is the point of the XXL size. A full rack lays flat in the Blue bag, where a smaller bag would force you to cut it or fold it.
Is the bag too big for everyday use
For a full rack the length is the whole benefit. On regular days the same bag lays flat for big marinades, sheet-pan prep, or freezing dinners, so the capacity is not wasted.
