Frozen Wine Slushie Packs
Wine will not freeze solid, which is the whole trick behind this. A bottle of rose blended with frozen strawberries and frozen flat in a bag turns into a slab of pink slush you can scoop straight into a glass, no blender, no ice, no watering anything down. Make six packs on a Sunday and you have a frozen drink ready in twenty seconds for the rest of the summer. Flat is the part that matters: a flat slab breaks into scoopable shards, while the same mixture frozen in a tub sets into one lump you have to chisel.
Ingredients
- 2 bottles rose or fruity red wine, chilled
- 6 cups frozen strawberries
- 1/2 cup fresh lemon juice
- 1/3 cup honey or simple syrup
- 1/4 teaspoon kosher salt
- Fresh mint, to serve
Directions
- Blend one bottle of wine with 3 cups of the frozen strawberries, a quarter cup of lemon juice and half the honey until smooth. Repeat with the second half.
- Taste it while it is still liquid. Freezing dulls sweetness noticeably, so it should taste slightly sweeter than you want the finished slush to be.
- Stir in the salt, which sharpens the fruit and keeps the mixture from tasting flat once frozen.
- Pour into the gallon bag, press out as much air as you can and seal.
- Lay the bag flat on a sheet pan and freeze at least 6 hours. Because of the alcohol it will never go rock hard, and it sets to the texture of a sorbet.
- To serve, break the slab up through the bag with your hands, scoop into glasses and add mint. Reseal and put the rest straight back in the freezer.
Tips and variations
- Stay between 9 and 13 percent alcohol. Much stronger and it never freezes; much weaker and it sets too hard to scoop.
- Oversweeten slightly before freezing. Cold mutes sugar, and an underseasoned batch cannot be fixed later.
- Freeze flat on a sheet pan, not standing up. A flat slab breaks into shards; a block has to be hacked apart.
- Frozen peaches with moscato, or frozen cherries with a light red, both work with the same ratios.
- For a version without alcohol, use white grape juice and add 2 tablespoons of vodka-free glycerin or just accept a firmer set and let it stand 5 minutes.
