  • 2 cups whole milk
  • 1 cup half-and-half
  • 4 cups chopped broccoli florets
  • 1 cup shredded carrot
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 3 cups shredded sharp cheddar cheese

Directions

  1. Melt the butter in a large pot over medium heat. Add the onion and cook until soft, about 5 minutes. Stir in the garlic and cook 1 minute.
  2. Sprinkle in the flour and cook, stirring constantly, for 2 minutes to cook out the raw taste.
  3. Slowly whisk in the broth, then the milk and half-and-half. Bring to a gentle simmer, stirring often, until slightly thickened.
  4. Add the broccoli and carrot. Simmer until the vegetables are tender, about 15 minutes.
