Ramen Noodles
This quick ramen turns a pack of instant noodles into a real bowl in about 15 minutes. A savory broth of chicken stock, soy sauce, garlic, and ginger does the heavy lifting, then the noodles cook right in it. Top each bowl with a soft jammy egg, green onions, and whatever vegetables you have. Skip the seasoning packet and build the broth yourself for far better flavor with barely any extra effort.
Ingredients
- 2 packs instant ramen noodles, seasoning discarded
- 4 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon toasted sesame oil
- 2 soft-boiled eggs, halved
- 2 green onions, sliced
- 1 cup baby spinach
Directions
- In a pot, combine the chicken broth, soy sauce, miso paste, garlic, and ginger. Bring to a simmer over medium heat.
- Simmer for 5 minutes to let the flavors come together, then stir in the sesame oil.
- Add the ramen noodles and cook until tender, about 3 minutes.
- Stir in the spinach and let it wilt, about 1 minute.
- Divide the noodles and broth between two bowls.
- Top each with a halved soft-boiled egg and sliced green onions, then serve hot.
Tips and variations
- Toss the seasoning packet. A broth built from stock, soy, and miso tastes far better than the powder.
- For a jammy egg, boil it 6 1/2 minutes, then chill it in ice water before peeling.
- Add cooked chicken, sliced pork, tofu, or mushrooms to make it more filling.
- Slurp with chopsticks and a spoon. The chopsticks lift the noodles while the spoon catches the broth.
