Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 cups diced sweet potato
  • 2 tablespoons olive oil
  • 2 cups baby spinach or kale
  • 1 cup halved cherry tomatoes
  • 1 avocado, sliced
  • 3 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions

  1. Heat the oven to 425F. Toss the sweet potato and chickpeas with 1 tablespoon olive oil, salt, and pepper, then roast on a sheet pan for 20 minutes until tender and golden.
  2. Meanwhile, combine the quinoa and water in a saucepan. Bring to a boil, cover, and simmer on low for 15 minutes until the liquid is absorbed.
  3. Fluff the quinoa with a fork and let it cool slightly.
  4. Whisk the lemon juice, remaining 1 tablespoon olive oil, and garlic into a dressing. Season with salt and pepper.
  5. Divide the quinoa among four bowls. Top with the roasted sweet potato and chickpeas, spinach, tomatoes, and avocado.
  6. Drizzle with the lemon dressing and serve.
