Buffalo Chicken Dip
This buffalo chicken dip is hot, creamy, and gone within minutes at any party. It layers cream cheese, buffalo sauce, ranch, and shredded chicken under a blanket of melted cheese, then bakes until bubbling. Use a rotisserie chicken to make it in 35 minutes flat. Serve it warm with celery sticks, carrots, and sturdy tortilla chips.
Ingredients
- 8 ounces cream cheese, softened
- 1/2 cup ranch dressing
- 1/2 cup buffalo wing sauce
- 2 cups cooked shredded chicken
- 1 cup shredded sharp cheddar cheese, divided
- 1/2 cup crumbled blue cheese (optional)
- 2 green onions, sliced
- Celery sticks, carrots, and tortilla chips, for serving
Directions
- Preheat the oven to 350F. Lightly grease a 9-inch baking dish or pie plate.
- In a large bowl, stir the softened cream cheese, ranch dressing, and buffalo sauce until smooth.
- Fold in the shredded chicken, 1/2 cup of the cheddar, and the blue cheese if using.
- Spread the mixture into the baking dish and top with the remaining 1/2 cup cheddar.
- Bake 20 to 25 minutes, until hot and bubbling around the edges and the cheese is melted.
- Scatter the green onions over the top and serve warm with celery, carrots, and chips.
Tips and variations
- Soften the cream cheese fully so the dip blends smooth. Leave it on the counter 30 minutes or microwave it for 20 seconds.
- Use Frank's RedHot or another cayenne-based wing sauce for the true buffalo flavor.
- For a sharper bite, swap the ranch for blue cheese dressing.
- Keep it warm in a small slow cooker on the low setting so it stays scoopable through the party.

Common questions
- What chicken should I use for buffalo chicken dip
- A rotisserie chicken is the fastest option. Two cups of shredded breast or thigh meat is plenty for one batch.
- Can I make buffalo chicken dip ahead
- Yes. Assemble it up to a day ahead, cover, and refrigerate. Add 5 to 10 minutes to the bake time since it goes in cold.
- How do I make it less spicy
- Cut the buffalo sauce to 1/3 cup and add more ranch. The cream cheese and cheddar also tame the heat.
- What do I serve with buffalo chicken dip
- Celery, carrots, and tortilla chips are classic. Toasted baguette slices and pretzel crisps also hold up to the thick dip.
