Avocado toast is fast, but a few small things make it great: properly toasted bread, a ripe avocado, and real seasoning. Top it with an egg to make it a meal. This makes two slices.

- 2 slices sourdough or whole-grain bread
- 1 ripe avocado
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- pinch of chili flakes
- 2 eggs, optional
- olive oil, for drizzling
Directions
- Toast the bread until deeply golden and crisp.
- Mash the avocado with the lemon juice and salt, leaving some texture.
- Spread the avocado thickly over the toast.
- Top with a fried or poached egg if using, and finish with chili flakes and a drizzle of olive oil.
Tips and variations
- Toast the bread well. Soft bread goes soggy under the avocado.
- A ripe avocado gives slightly to gentle pressure. Hard ones will not mash smooth.
- Lemon juice keeps the avocado green and adds brightness.
- Add everything-bagel seasoning, feta, or sliced radish for variety.
