Sushi for a dinner party, without cooking during the party

The short version: do not roll sushi for your guests. Make the rice, put fillings in bowls, hand everyone a sheet of nori, and let them build cones. Nothing needs cutting, nothing can fall apart in front of an audience, and you get to sit down.

The first time I made sushi for people I rolled and cut everything myself while six adults watched. It took ninety minutes, half the rolls looked wrong, and I ate standing up.

The answer is temaki. Hand rolls. Cones that each person makes at the table, eaten immediately.

Why hand rolls solve everything

  • No cutting. Cutting is where home rolls fall apart, and it happens in front of everyone.
  • No timing. Each person makes one, eats it, makes another. Nothing sits waiting.
  • Everyone eats what they want. The vegetarian, the person who hates avocado, the child. All handled without a separate dish.
  • It is a genuinely fun thing to do together, which a plate of pre-made sushi is not.

Quantities for six

Nori sheets 20, halved, so 40 cones
Fish or protein 600g total across two or three kinds
Vegetables 4 or 5 kinds, a handful each
Soy, wasabi, pickled ginger Small bowls, two of each along the table

Assume four to six cones per person. It looks like a lot of nori. It is not.

Timeline

Day before. Shop. Make pickles if you are making any. Nothing else, because rice and fish are both same-day jobs.

Three hours before. Cut all vegetables into batons and refrigerate covered. Prepare cooked fillings.

Ninety minutes before. Make the rice. It needs to cool to room temperature, and it must not go in the fridge.

Thirty minutes before. Slice the fish, arrange everything in bowls, set the table.

At the table. Nothing. That is the entire point.

What to put out

Two or three proteins, four or five vegetables, two sauces. More than that and the table gets crowded and people dither.

A good spread: salmon, cooked shrimp, and marinated tofu. Cucumber, avocado, carrot, pickled radish, spring onion. Soy and spicy mayo.

Make at least half the options cooked or vegetarian. Somebody at your table will not want raw fish and it is much kinder if that is simply normal rather than a request.

Show them once

Half a sheet of nori, shiny side down, in the palm. A small scoop of rice on the left third, spread thin. Fillings diagonally. Fold the bottom left corner over and roll into a cone. Eat immediately, while the nori is still crisp.

Do it once, slowly, then let everyone get on with it. Nobody needs a lesson.

Questions

How much sushi rice do I need per person?

About half a cup of uncooked rice per person for a main course, so three cups for six. That gives roughly four to six hand rolls each.

Can you make sushi ahead for a party?

Not really, and this is why hand rolls are better. Sushi rice must not be refrigerated or it goes hard, and nori softens within minutes of meeting rice. Prepare the components ahead and assemble at the table.

How many nori sheets do I need for six people?

About 20 full sheets, halved to make 40 cones. Hand rolls use half a sheet each and people eat more than they expect.

What if a guest will not eat raw fish?

Put out cooked shrimp, smoked salmon or marinated tofu alongside. Making half the spread cooked or vegetarian means nobody has to announce a preference.
