Quick pickles: the thing that fixes a boring plate

The ratio: equal parts vinegar and water, one tablespoon of sugar and two teaspoons of salt per cup of liquid. Warm it, pour it over sliced vegetables, wait fifteen minutes. That is a quick pickle, and it will keep three weeks in the fridge.
If I could give one piece of advice to somebody whose cooking feels flat, it would be this. Not a technique, not a knife. Acid.
Most home cooking is missing something sharp. Restaurants know it, which is why there is nearly always a pickle, a squeeze of lemon or a spoonful of something vinegary on the plate. It cuts fat, wakes up the other flavours, and makes an ordinary dinner taste like somebody thought about it.
The method
- Slice thin. Thin things pickle in minutes, thick things take days. A mandoline helps, carefully.
- Warm the brine just enough to dissolve the sugar and salt. It does not need to boil.
- Pour it over and leave at room temperature for fifteen minutes, then refrigerate.
- Eat from about half an hour onwards. Better the next day, good for about three weeks.

Pickled red onion is the one to start with. It turns bright pink, takes twenty minutes, and improves tacos, sandwiches, salads, eggs, and anything on toast.
Things worth adding
The base brine is deliberately plain. A teaspoon of any of these changes it completely:
- Black peppercorns and bay for something savoury and classic.
- Coriander seed and a strip of orange peel for carrots.
- Dill for cucumber, obviously, and it is obvious because it works.
- Star anise and a cinnamon stick for red cabbage in winter.
- Fish sauce and a little lime for anything going near a Vietnamese sandwich.
Which vinegar
Rice vinegar is mild and slightly sweet, and it is the one I use most. Cider vinegar is fruitier and good with carrot and cabbage. White wine vinegar is neutral. Plain white vinegar is harsh on its own but fine mixed half and half.
Avoid balsamic. It is too sweet and it turns everything brown.
Where they go
On the boring plate. Grain bowls, roast chicken, a cheese sandwich, rice and eggs, anything fried, and sushi where a sharp element is doing the job the pickled ginger normally does.
This is also the single best fix for day-four meal prep. A spoonful of something sharp turns leftovers back into a meal.
Brine in a bag rather than a jar and you need far less liquid, because the bag collapses around the vegetables instead of leaving a gap you have to fill.
