Sunday batch cooking that still tastes good on Wednesday

The short version: cook components, not finished meals. A tray of roast vegetables, a pot of grains and a protein can become four different dinners. Five identical boxes of the same curry becomes something you resent by Tuesday.

The reason most meal prep collapses is not effort, it is boredom. You spend Sunday afternoon making five identical lunches, eat two, and buy a sandwich on Wednesday. The food was fine. The sameness was not.

Cook components

Make three or four things that combine rather than five copies of one thing.

  • A grain. Rice, farro, couscous, orzo.
  • A tray of roast vegetables. Whatever is cheap. Roast hard, so the edges catch.
  • A protein. Roast chicken thighs, a tray of chickpeas, boiled eggs, marinated tofu.
  • Something sharp. A jar of quick pickles or a lemony dressing. This is the one people skip and it is what makes day four taste like food rather than leftovers.

Those four give you a grain bowl, a wrap, a salad, and something on toast. Same fridge, four dinners.

Undercook the vegetables

Everything cooks twice: once now, once when you reheat it. Vegetables that were perfect on Sunday are grey by Tuesday.

Pull them a few minutes early. Same for pasta and grains, which keep absorbing moisture in the fridge and go soft.

Season at the end, not the beginning

Salt, acid and fresh herbs fade in the fridge. Garlic gets louder, chilli gets duller, and anything with lemon in it tastes flat by day three.

Keep the base fairly plain and finish each portion as you eat it. A squeeze of lemon, a spoon of yoghurt, fresh herbs, good oil. Ten seconds, and it is the difference between a meal and a duty.

Freeze flat, thaw fast

Anything going in the freezer should be flat, not in a lump. A flat portion freezes quickly, stacks like a book, and thaws in a fraction of the time.

Label with what and when. Everyone thinks they will remember. Nobody remembers.

What does not survive

  • Dressed salad. Dress it as you eat it.
  • Anything crispy. It will not be crispy. Accept this or eat it Sunday.
  • Potatoes in a sauce. They go grainy when reheated.
  • Fish, past two days. Cook it fresh.
