Ingredients

  • 2 cups sushi rice, cooked and seasoned
  • 2 nori sheets
  • 4 ounces smoked salmon
  • 3 ounces cream cheese, cut into thin strips
  • 1/2 cucumber, cut into thin strips
  • 1 tablespoon toasted sesame seeds
  • Soy sauce, for serving
  • Pickled ginger and wasabi, for serving

Directions

  1. Lay one nori sheet shiny side down on a bamboo mat. With damp hands, spread half the rice over it, leaving a 1-inch strip bare at the top.
  2. Lay smoked salmon, cream cheese, and cucumber in a line across the lower third of the rice.
  3. Lift the edge of the mat and roll away from you, pressing firmly to tuck the filling tight. Seal the bare strip against the roll.
  4. Sprinkle the roll with sesame seeds.
  5. Wet a sharp knife and slice each roll into 8 even pieces, cleaning the blade between cuts.
  6. Serve with soy sauce, pickled ginger, and wasabi.
