Ingredients
- 6 cups chopped romaine and mixed greens
- 2 cooked chicken breasts, diced
- 6 slices bacon, cooked and crumbled
- 3 hard-boiled eggs, quartered
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled blue cheese
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and black pepper to taste
Directions
- Spread the chopped greens across a large shallow platter.
- Arrange the chicken, bacon, eggs, avocado, tomatoes, and blue cheese in rows on top.
- In a jar, combine the red wine vinegar, olive oil, Dijon, honey, salt, and pepper.
- Seal the jar and shake until the vinaigrette is emulsified.
- Drizzle some dressing over the salad just before serving.
- Bring the rest of the dressing to the table.
