Banana Pudding

Southern banana pudding layers vanilla wafers, fresh banana slices, and a quick no-cook pudding under a cloud of whipped cream. Ingredients

  • 1 5.1-ounce box instant vanilla pudding mix
  • 3 cups cold whole milk
  • 1 14-ounce can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 11-ounce box vanilla wafers
  • 5 ripe bananas, sliced

Directions

  1. In a large bowl, whisk the pudding mix with the cold milk for 2 minutes, then whisk in the sweetened condensed milk and vanilla. Refrigerate 5 minutes to set.
  2. In a separate chilled bowl, beat the heavy cream and powdered sugar to stiff peaks.
  3. Fold half of the whipped cream into the pudding until smooth and light.
  4. Spread a thin layer of pudding in the bottom of a 9-by-13-inch dish. Top with a layer of vanilla wafers and a layer of banana slices.
  5. Repeat the pudding, wafers, and bananas until everything is used, finishing with pudding.
  6. Spread the remaining whipped cream over the top and chill at least 4 hours, or overnight, before serving.

Tips and variations

  • Use ripe but firm bananas. Overripe bananas turn mushy and brown in the layers.
  • Chill the pudding at least 4 hours so the wafers soften into a cake-like texture.
  • Press a layer of wafers around the edges of the dish for a pretty border.
  • To slow browning, toss the banana slices in a little of the pudding before layering.
